Robin--Thanks so much for letting us know about 'Winter Luxury Pie'. I too have been disappointed with pie pumpkins in the past, so I'm definitely going to put this variety on my "must try next year" list. And it is so sweet of you to offer to share seeds!

Your pumpkin bars are delicious. I made them with pumpkin that I grew. This year I tried "Winter Luxury Pie" pumpkin seeds from Nichols Garden Nursery. These pumpkins are the BEST. They are meaty, sweet, so flavorful and not at all watery. I just clean the seeds and strings out and place on a lightly oiled baking sheet and bake till very soft. Then I just mash the meat with a potato masher. The seeds are also delicious roasted. After being so disappointed with other "pie" pumpkins that I have grown I am so happy to have found "Winter Luxury Pie"....... I'd be happy to share seeds from mine if anyone is interested......rguterson@msn.com

I took your advice on food that could go from "comfort" to "celebratory" and back easily. The lemon verbena martinis and the pork chops with onion sage sauce over creamy mashed potatoes were all perfect for our celebration! :)

Robin, I haven't tried this recipe with homemade pumpkin before. I'm sure they'd be good though! Sometimes homemade pumpkin puree can be a bit stringy. Running it through a food mill, or processing it for a minute or so in a food processor takes care of that problem though!

These look delicious. After reading the recipe I am sure they are! It has been bookmarked for baking at a later date. Thanks for mentioning election day. You are about the only food blogger who has so far. I think the rest must have cooked their brains checking those roasted veggies in the oven. I don't see how anybody could possibly blog about anything else on this momentous day.
