		<description>J. Peen--I don&#039;t know why you couldn&#039;t substitute brine-cured olives. I&#039;m not sure about reusing the oil...I know oil can harbor bacteria. You might want to get in touch with your local cooperative extension to see what they would say.</description>

		<description>A few questions if I may: Can I add brine-cured olives (well drained of course) to a container of this and have it stay viable just as long? I&#039;m fond of those store-bought small snack containers of seasoned olive oil and feta with olives present but those arent easy to get out here and awfully expensive when available. Also, can you re-use the infused oil for another batch? I&#039;m not likely to use the seasoned oil in many other home food items and it seems a waste of an well infused oil to toss it or let set in the fridge until I&#039;m not entirely sure of its usability from repeated openings. I guess the real question should be about the re-usability/safety of the oil for non-immediate purposes.</description>

I wonder how well this marinade would work with fresh mozzarella...may have to give it a shot. Tho this feta would be fantastic in a spinach, feta, grain dish we love (and haven&#039;t had in a while)....hmmm maybe dinner 2nite!</description>
